I’ve always wanted to make a gourmet fruit salad but never thought of making one myself.
Well, I’m glad I finally did!
The recipe below is based on a recipe I found on the online garden-foods-and-cooking-garden blog, Gourmet Garden.
The author of the recipe, Melissa, explains the process of how she made the fruit salad and the fruits she used.
What you need: • 1 large bunch of raspberries (about 1kg) (I used a ripe one) • 2 large ripe tomatoes (about 4 cups) • 1 large clove of garlic (about 2 tbsp) • 4 large ripe avocados (about 8 cups) • 1 medium banana (about 16-20cm) • 3 large pitted pears (about 3-4 cups) How to make the fruit salads: First, peel and cut your raspbery berries into thin slices.
(I used the smaller ones in the photo above, which is a bit smaller than the whole fruit) Then cut the ripe tomatoes into small cubes, which will form the fruit.
Then peel the avocado into thin, even slices.
I peeled mine and cut it in half.
Next, chop up the fruit into small chunks and put them into a bowl with a little water.
Finally, squeeze the pulp out of the banana and place it into a food processor and pulse until it turns into fine powder.
After that, add the garlic, tomatoes, pears and bananas.
Once all the fruit is chopped, add them all to a food-safe bowl and mix with a fork until everything is well mixed.
Now, in a small saucepan, add a pinch of salt and a pinch each of sugar, vinegar, lemon juice and honey.
Whisk this all together and cook for about 10 minutes, stirring occasionally.
While the fruit cooks, add your other ingredients and cook over low heat for about 15 minutes, until the mixture starts to thicken.
At this point, you can remove from the heat and transfer it to a bowl.
Take your bowls, pour the mixture into a large serving bowl, cover and let it sit for 10 minutes.
You can also add the chopped fruit to the bowls if you like and serve it immediately.
